The tomato belongs to the family of Solanaceae. It is a native plant of Central and South American and comes from Peru. The current name comes from the word «tomatl» of dialect of Mexico. It was unknown in Europe until 1544, when the Italians named it "golden apple» (pomi d'oro) because of yellow or orange color that mature tomato had. It is a perennial plant that is grown as an annual for its edible fruits and reaches up to 10 m. The tomato is cultivated in warm climates and soils rich in organic matter. The tomato is acidic and has slightly spicy taste, while its nutritional value is important. It is rich in vitamins A, B, C and E, vegetable fibers, minerals and trace elements ( selenium, potassium, calcium , magnesium , phosphorus, manganese), which help on regulation of blood glucose , the constipation and regulation of cholesterol. Tomato is consumed either raw in salads or cooked. Its juices are still used for the production of sauces and as an additive to traditional dishes giving special smell and taste.
