The Setsuan pepper comes from a shrub with height 3-7m. Its bark is very aromatic, it has leaves with smell of lemon and green flowers which are followed by purple fruits that have a black seed inside them. The setsuan pepper is a little intense but very spicy and slightly bitter and it is a very important spice and feature of Asian and Indian cuisines. It accompanies soups and meat dishes and gives a special flavor to fish and in seafood.
