Mahlab is the seed of the plant Prunus Mahaleb. It is a kind of cherry and it grows in many areas of Europe and the Mediterranean, such as Southern Europe, Central-Asia, Northwest Africa, Morocco and Northwest Pakistan. The taste of the mahlab reminds bitter almond and cherry. It is used either mashed or as a sheed to emphasize the sweet taste of traditional sweets. It can be added in the brioche, the cake and generally the sweet pastries. The mahlab contains an ingredient: the Coumarin, which is soothing and anti-irritant.
