The sundried tomato is a food which is consisted of ripe normal tomatoes or dry tomatoes which are dried under the sun to evaporate the water which is contained in them. The tomatoes are losing 88% of their weight after drying, while larger tomatoes lose 93%. To produce one kilogram of dried tomato we need about 14 kg of fresh tomatoes. The dried tomatoes have the same nutritional value as fresh: they are rich in lycopene, antioxidants and vitamin C. The dried tomatoes are a great variety of colors, sizes and flavors. Traditionally, they are served with: olive oil, rosemary, basil and garlic.
