The citric acid is an natural chemical substance which is contained on high quantity on lemons and other citrus plants. It is used in food as a physical preservative,as a physical coagulator but also as an acidity modulator. At the kitchen we use it as coagulator on marmalades and also on fruit salads to avoid the fruit blackening by the excibition on oxygen. The citric acid prevents the creation of sugar crystals when we make candy.
