The Arabic gum is a substance which is obtained from two species of acacia tree. It is used in food industry as a stabilizer. It is a strange and varied mixture of oligosaccharides, polysaccharides and glycoproteins. In Egypt, it was used as a coagulator for cosmetics and in mummification. The Arabian gum is used in confectionery for the preparation of chewing gums.
